French Onion Soup

This French Onion soup has all kinds of flavors. Melissa has outdone herself with this original recipe, the first in our series of homemade soup recipes.

Ingredients

  • 5-10 onions sliced thin
  • 2-4 cloves garlic minced
  • 2 boxes of beef stock, no salt added
  • 1 tsp better than bullion beef flavor
  • 1/2 cup red wine
  • 1 shallot sliced thin
  • 1-2 sticks of butter to cook onions in
  • 1 bay leaf
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • French bread toasted hard, or you can use croutons
  • Shredded cheese. I like a combination of mozzarella, provolone, and Jarlsberg.

Instructions

  1. Sauté onions and shallot in butter until caramelized 5- 10 minutes
  2. Add garlic and cook for 1- 2 minutes
  3. Then add red wine and cook for 2-3 minutes
  4. Add beef bouillon, beef stock, and seasonings; let cook for 30 minutes to an hour.
  5. When your soup is ready, get an oven-safe bowl and put your soup in
  6. Place your hard-toasted slice of bread on top( you can also use croutons)
  7. Top with your cheese
  8. Place in the oven under the broiler until the cheese is melted and browned. I like mine to get crispy around the edges.
  9. Enjoyyyyyy
