This French Onion soup has all kinds of flavors. Melissa has outdone herself with this original recipe, the first in our series of homemade soup recipes.
Ingredients
- 5-10 onions sliced thin
- 2-4 cloves garlic minced
- 2 boxes of beef stock, no salt added
- 1 tsp better than bullion beef flavor
- 1/2 cup red wine
- 1 shallot sliced thin
- 1-2 sticks of butter to cook onions in
- 1 bay leaf
- 2 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- French bread toasted hard, or you can use croutons
- Shredded cheese. I like a combination of mozzarella, provolone, and Jarlsberg.
Instructions
- Sauté onions and shallot in butter until caramelized 5- 10 minutes
- Add garlic and cook for 1- 2 minutes
- Then add red wine and cook for 2-3 minutes
- Add beef bouillon, beef stock, and seasonings; let cook for 30 minutes to an hour.
- When your soup is ready, get an oven-safe bowl and put your soup in
- Place your hard-toasted slice of bread on top( you can also use croutons)
- Top with your cheese
- Place in the oven under the broiler until the cheese is melted and browned. I like mine to get crispy around the edges.
