Ingredients

  • 1 can black beans drained and rinsed
  • 1 can black eyed peas drained and rinsed
  • 1 can white corn drained
  • 1 bell pepper I prefer yellow , red or orange or a combination
  • 1/2 red onion diced
  • 1/2 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1/2 cup sugar
  • 5 tablespoons tiger sauce

  1. Combine all beans with corn and diced onions and peppers
  2. combine all liquid ingredients
  3. combine all together
  4. let set in refrigerator for 3 – 4 days
  5. serve with tortilla chips
