Sausage Breakfast Bake

A simple breakfast bake will make a great breakfast for your family and friends. You can make this ahead of time and refrigerate it overnight. When you wake up, pull it out of the refrigerator and bake. It’s as simple as that! This is one of many of Mellissa’s original recipes. I have to admit this one is absolutely delicious!

Start with:

  • 1 – 20 ounce package of shredded hash brown potatoes from the refrigerated section in the grocery
  • 1/3 cup melted butter
  • 1 tsp Better Than Bouillon Beef
  • 1 pound breakfast sausage
  • 1/2 of an onion diced
  • 1/2 of a bell pepper diced
  • 1 cup cottage cheese
  • 3 eggs beaten
  • 1 cup shredded cheese
  1. Melt butter and stir the beef bouillon into the butter
  2. Combine the butter mix and the potatoes mix well
  3. Press the potato mixture into a 9 or 10-inch pie pan
  4. Bake at 350 degrees for 30 minutes until lightly browned
  5. While that is baking, fry the sausage until brown and delicious
  6. Add the onions and peppers and cook 3-4 more minutes, then remove from heat
  7. In a large bowl, mix together the cottage cheese, eggs, and cheese
  8. Add the sausage mixture to the cheese mixture, then add 3/4 of your shredded cheese and combine
  9. When your potato crust is ready, pour your mix into the potato crust
  10. Top with the remaining cheese
  11. Return to oven and bake at 350 degrees for 40-45 minutes
  12. Let sit for 5 minutes before cutting.
