Herb & Oven: A Fusion of Flavor, Personality, and Homegrown Hospitality
Sometimes you walk into a restaurant and immediately know you’re somewhere a little different.
That was our experience at Herb & Oven in Tarpon Springs.
From the food to the open kitchen to Chef Andonia’s personality, Herb & Oven doesn’t feel like a typical restaurant. It has a comfortable, homegrown feeling that makes you want to settle in, enjoy your meal, and take in what’s happening around you.
And that’s exactly what we did.

What We Ordered
We started with fried calamari, then I had Pasta Bolognese and my wife had Chicken Parmesan. Of course, I couldn’t leave without dessert.
One thing stood out throughout the meal: the food was house-made.
🦑 Fried Calamari

We started with the fried calamari, and it was a great way to begin.
The calamari was crispy on the outside while staying tender inside, which is exactly what you want. But what really stood out was the seasoning. The blend of flavors made it more than standard fried calamari.
The marinara sauce was also very tasty and full of flavor, making it a great complement to the calamari.

🍝 Pasta Bolognese

I ordered the Pasta Bolognese, made with slow-simmered beef, pork, and pancetta ragu over pasta and topped with shaved Parmigiano Reggiano.
The Bolognese was excellent. The pasta was cooked al dente, giving it just the right texture and bite.
The beef and pork were tender and full of flavor, while the sauce added another layer that brought everything together. Then came the shaved Parmigiano Reggiano, which added a sharp, savory finish that complemented the richness of the meat and sauce.
What I liked most was how everything worked together—the pasta, tender beef and pork, flavorful sauce, and the cheese’s sharpness.

🍗 Chicken Parmesan

My wife ordered the Chicken Parmesan, and she really enjoyed it. After trying some myself, I could see why.
The chicken was tender, and the pasta was cooked al dente. She also liked the way the angel hair pasta looked on the plate. It gave the dish a lighter appearance while still pairing well with the chicken.
The marinara sauce was another highlight. It was a great choice for the dish and brought a rich tomato flavor that worked well with the chicken, pasta, and cheese.
I also liked that Herb & Oven uses a chicken cutlet rather than a traditional chicken breast. The thinner cutlet gave the chicken a different texture and made each bite work nicely with the pasta, marinara, and melted cheese.

🍰 House-Made Cheesecake

Now, I have to talk about the cheesecake.
I love cheesecake, and I can’t pass it up without a slice. 😂
I ordered the house-made cheesecake with berry sauce, and it was a great way to finish the meal. The cheesecake had the rich, creamy flavor you’d expect from a good cheesecake, but the berry sauce really made it stand out.
The rich cheesecake and sweet berry sauce created a nice balance in each bite.
I ordered the cheesecake for myself, but apparently my wife couldn’t resist. She had to sneak a taste—and I can’t blame her.
Foodie Mob Quick Take: If you’re a cheesecake lover like me, save room for dessert. The house-made cheesecake with berry sauce is worth it.
The Vibe
Chef Andonia is the life of Herb & Oven.
One thing that immediately stood out to me was the restaurant’s setup. Because of the way the tables are positioned and the open feel of the kitchen, you can actually see Chef Andonia working while you’re enjoying your meal.

It gives you a behind-the-scenes look at what’s happening in the kitchen, but Chef Andonia doesn’t just stay behind the scenes. She interacts with her customers while she’s working, which gives the restaurant a very personal feel.
At one point, Chef Andonia came out to talk with my wife and me. She had actually noticed me from the kitchen, looking around the restaurant the way I always do when I’m reviewing a place. I’m taking in the room, watching what’s happening, and trying to get a feel for the restaurant.
Apparently, she noticed.
She jokingly told me I should probably pay more attention to my date! 😂
That gave us a good laugh, and it also showed me something about Chef Andonia. She was paying attention to her customers, not just the food coming out of her kitchen.
A Moment That Stood Out
There was another moment that caught me completely by surprise.
Chef Andonia came out of the kitchen and got everyone’s attention. I expected her to say something about the restaurant or the food, but instead, she took the opportunity to praise her staff.
That really caught my attention.
In a restaurant, the people working behind the scenes and on the floor are a huge part of the experience, and it was refreshing to see a chef take a moment to recognize them in front of everyone.
It was a simple gesture, but it said a lot about Chef Andonia and how much she appreciates the people who work with her.
Watching her cook, talk with customers, and move around the kitchen reminded me of being at home—cooking, talking, and enjoying the company of the people around me.
The place genuinely felt like home.
The restaurant had a relaxed energy throughout, and everyone seemed to be enjoying themselves. You could look around the room and see customers enjoying both the food and the experience.
That’s something you don’t get at every restaurant.
At Herb & Oven, the kitchen isn’t separated from the experience. The chef is part of it.
A Fusion Chef’s Touch
Chef Andonia describes herself as a Restaurateur | Fusion Chef, and after our meal, I could see why.
Herb & Oven has familiar Italian dishes, but the food also has a creative side that gives it its own personality.
You recognize the dishes, but something feels different. It’s not simply about following a traditional recipe—it’s about taking familiar food and putting her own spin on it.
That’s what I enjoyed about the experience.
The food felt familiar enough to be comforting, but creative enough to keep things interesting.
That fusion approach also fits the restaurant itself. The open kitchen, Chef Andonia interacting with customers, and the house-made food all give Herb & Oven its own personality.

Herb & Oven gave us a very good dinner, but what stood out wasn’t just the food.
The fried calamari was crispy and tender with flavorful seasoning and marinara. The Pasta Bolognese was hearty and flavorful with perfectly cooked pasta and tender meat. My wife really enjoyed the Chicken Parmesan, especially the tender chicken and al dente angel hair pasta.
And yes, the house-made cheesecake with berry sauce was worth saving room for.
But the food is only part of the story.
The open kitchen, Chef Andonia’s personality, her interaction with customers, and the relaxed atmosphere all came together to create something that felt homegrown and personal.

Final Thoughts
Our dinner at Herb & Oven was more than just a good meal.
It was an experience.
From watching Chef Andonia work in the kitchen to having her come out and joke with us, there was a personal connection that you don’t always get when dining out.
And then there was the moment when she stopped to recognize her staff. That told me a lot about the person behind the food. She appreciates the people who help make Herb & Oven what it is.
When you combine that personality with house-made food and a fusion approach to familiar dishes, Herb & Oven becomes a restaurant with its own identity.
I also think Herb & Oven would be a great choice for a special date night or a special occasion. The atmosphere, the food, and Chef Andonia’s personal touch make dinner feel like more than just going out to eat.
And would I come back?
Absolutely. I will definitely be back.
For me, that’s what makes a restaurant memorable.
Good food gets you through the door. The experience is what makes you want to come back.
And Herb & Oven gave us both.
